Comfort Food, is something that warms your soul. I forgot to take a picture of this recipe we tried Saturday because I didnt think I would want to share it so bad so because comfort food warms my soul as Oswald does the same I decided to share a picture of him.
So Saturday I found the best scalloped potatoe recipe that I now have to share for our cookbook,

2lbs of potatoes
1/4 cup of butter
1/4 cup of all purpose flour
1 1/2 cups of milk ( I used 2%. )
salt and pepper
2cups of shredded cheese ( cheddar )
fresh chopped chive

pre heat oven to 350 degree F, grease a 13x9” pan
bring a lg pot of water to a boil and cook your cleaned potatoes for 25 min with the skin on. This cooks them partially so they don’t have have to be in the oven as long.

While they are boiling, in a saucepan melt butter, whisk in flour and whisk until golden brown. Stir in milk and cook until thick. Remove from heat add salt and paper and half of your shredded cheese.

de skin your cooled potatoes, cut into thin rounds, place 1/3 of them in your pan and cover with 1/3 of your cheese sauce. And keep layering until you are done. Sprinkle your last cup of cheese on top and sprinkle some paprika. Put it in the oven for 30 min and add your fresh chives before serving.
